When pad kaphrao became Thailand's default lunch, the fried-rice version followed as surely as noon follows morning: the same chili, garlic and holy basil, now carried by rice that has been through the flame itself. It is rice-shop logic — one wok, two cravings, zero compromise. Add a fried egg on top and you are eating like a Bangkok regular.
