Where it comes from

Khao pad pu is Bangkok shophouse royalty: sweet crab folded through egg-laced rice, seasoned so lightly that only wok skill holds it together. Thai-Chinese cooks made it the quiet test of a kitchen — too much sauce and you are hiding something; too little fire and the rice goes dull. Ours stays delicate and ocean-fresh.
