Where it comes from

Panang is the gentle aristocrat of Thai curries — thicker and sweeter than red curry, perfumed with kaffir lime, made to cling to meat rather than pool around it. It has always been at its best on slow-cooked cuts, and a dino rib is the slowest of all: a full beef short rib on the bone, cooked until the meat gives way to a fork. Here the rib takes the place of the usual sliced protein — one plate, one rib, and a great deal of sauce worth chasing.
