Where it comes from
Thailand's classic cup descends from Teochew coffee stalls — the tradition whose iced black version, oliang, takes its name from the Teochew for 'black and cold.' The beans are roasted dark, traditionally rounded with toasted grains and sesame, brewed through a cloth sock filter, and finished sweet and creamy. It is coffee as Bangkok has poured it for generations: strong enough to stand up to ice, sweet enough to count as a treat.
