Where it comes from
Chow mein simply means 'fried noodles,' and few dishes have traveled further on two words. Cantonese cooks carried it across the Pacific over a century ago, and it put down roots everywhere it landed — Thailand's wok culture adopted it without a second thought. Ours tosses springy yakisoba-style noodles with egg, cabbage, celery and carrot: a crossroads dish for a crossroads table.
