Rib-Eye Salad

Where it comes from

Yam means to toss or mix, and the yam family is Thailand's answer to the salad course: the dressing — lime, fish sauce, chili, a breath of sugar — matters more than any leaf. Yam nuea yang, the grilled-beef yam, is what Thai cooks crave when a salad needs to eat like a meal. We slice rib-eye warm off the grill over cool greens, radish, green onion and mint, so every forkful runs hot and cold at once.
