Where it comes from
Pad kaphrao was built for quick meat and a hot wok; this plate slows one half of the equation down. The dino rib — a full beef short rib on the bone — is cooked low for hours until it is fork-tender, then finished in the wok with garlic, bird's-eye chili and true holy basil, so the sauce sears onto the meat instead of sitting under it. It is the dish for the table that wants krapow loud and wants to share it.
