Where it comes from
Bananas have been Thailand's dessert since long before anyone imported sugar — grilled over coals, poached in syrup, fried in batter at every market. The samosa is a newer wrapper on that old idea: a thin pastry folded around ripe banana and fried until it blisters, so the fruit inside turns jammy and warm. Best eaten within minutes, while the crunch and the softness still disagree.
