Where it comes from

Ice reached Siam by ship in the 1860s and was precious enough for royal receptions; only when ice factories spread under King Rama V did frozen treats reach the street. Thai vendors, short on dairy, churned coconut milk instead — and i-tim kati was born, scooped for schoolchildren ever since. The bread is the masterstroke: a soft sweet roll cradling the cold scoops, dessert you can eat while walking. Humble treat, royal backstory.
