Where it comes from
Roti came to Thailand with Muslim traders from the Indian subcontinent and became one of the country's best-loved street desserts — the cart with the griddle is a fixture of every night market. The dough is stretched paper-thin, slapped onto a buttered griddle until it blisters and crisps, then folded and finished sweet, condensed milk and sugar in the classic version. Crisp edges, soft folds, eaten hot.
