Pad pak ruam is less a recipe than a philosophy: the Thai home cook shops first and decides later, and the day's best vegetables meet in one wok with garlic and a light, glossy sauce. On a table crowded with curry and chili, this is the green pause — the dish that lets every other dish shine. Ours changes with the market, exactly as it should.
