Where it comes from
Thailand keeps meat-free days — temple mornings, merit-making, the great vegetarian festival each autumn — and the spring roll adapted generations ago. Cabbage, carrot and glass noodles cook down sweet inside the wrapper, so the roll needs nothing but its own crunch and a bright dipping sauce. Some order it out of principle; most reorder it out of love.
