Where it comes from
Fried squid circles the globe, from calamari fritti on Italian coasts to pla muek tod in Bangkok's night markets, where squid hits the fryer within sight of the boats that caught it. Our version splits the difference: a thin seasoned crust in the Mediterranean style, fried hot and fast the street-stall way so the rings stay tender. A beach town felt like the right home for it.
