Fresh Spring Rolls

Where it comes from

Fresh rolls are Southeast Asia's answer to a salad you can hold: rice paper stretched around glass noodles, herbs and cool vegetables. They flow from the same popiah tradition that produced the fried roll — the fresh version simply refuses the oil. Ours bundles ground chicken and tofu with crisp lettuce, cucumber, carrot and basil: the calm, cold counterpoint to a spicy table.
