Where it comes from
Tao hu tod is the Bangkok street snack that changes tofu skeptics' minds: firm tofu fried until the outside shatters and the inside stays soft as custard, then dipped in a sweet chili sauce thick with crushed peanuts. It is one of the oldest Chinese gifts to Thai cooking and one of the simplest — no marinade, no batter, just hot oil and patience. Fast enough to arrive before anyone has finished deciding on mains.
